Hill up Potatoes when Flowers Form.

Potatoes tubers form underground and will push up out of the soil if you don't "hill" the soil around the growing foliage. A good rule of thumb is to begin hilling when the flowers begin to form on the tops of the leaves. Use a hoe to bank up the soil at the base of the plants, leaving four or five inches of growth showing.
