Savory Bean & Tomato Salad

You can use savory to spruce up everything from beans to fresh vegetables to rich cuts of meat. The homemade salad dressing for this side also boasts blue cheese, lime juice, minced garlic and pine nuts for crunch.

Serves: 6 helpings

Cook Time: Prep - 25 minutes

Ingredients

1 lb fresh beans, trimmed,

6 medium tomatoes (about 2 lbs sliced)

3 green onions, coarsely chopped

Dressing:

1/4 cup lime juice

2 oz crumbled blue cheese

5 tsp olive oil

1/2 tsp minced garlic

1/8 tsp salt

1/8 tsp pepper

1 tbs pine nuts

2 tbs fresh savory leaves

Directions

Place beans in a large saucepan and cover with water to bring to a boil. Cook, Uncovered, for 8-10 minutes or til crisp-tender.

Drain and immediately place the beans in ice water. Drain and pat dry. Cut into 2-in. pieces. Divide the tomatoes, green onions and cut green beans among six salad plates.

Fordressing, in a blender, combine the time juice, blue cheese, oil, garlic, salt and pepper until blended. Drizzlever salads. Sprinkle with pine nuts and savory.
