Homemade Salsa
This is a crunchy and colourful salsa. For the best results, prepare and serve it on the same day.
Preparation/Total Time: 20 minutes Ingredients (Makes 2 1/2 cups) 4 medium tomatoes, chopped and well drained 1/2 cup chopped green onions 1/2 cup chopped celery 1/4 cup chopped green pepper 1 tablespoon white wine or apple juice 1 tablespoon cider vinegar 1 tablespoon canola oil 1 teaspoon mustard seed 1/2 teaspoon salt 1/4 teaspoon ground coriander 1/8 teaspoon pepper Tortilla chips to serve Method In a large bowl, combine tomatoes, onions, celery and green pepper. In a small bowl, whisk the wine or apple juice, vinegar, oil, mustard seed, salt, coriander and pepper. Pour the contents over the vegetables and toss to coat. Serve with tortillas. Refrigerate any leftovers.
