Old-Fashioned Rice Pudding
This is a great recipe idea for using homemade raisins, but if you fancy something different, try substituting dried cranberries. Serves 4-6 Preparation/Total time: 55 minutes Ingredients: 4 1/2 cups milk 1/2 cup uncooked rice [Arborio is best] 1/3 cup sugar 1/2 tsp salt 1/2 cup raisins Dash of cinnamon 1 tsp vanilla essence Method: Combine first 6 ingredients in a large saucepan and bring to the boil over medium heat, stirring frequently. Pour into a 1 1/2 quart baking dish and cover. Bake at 325F for 45 minutes. Stir every 15 minutes. Uncover for the last 15 minutes. Remove from the oven and stir in the vanilla essence. Cool at room temperature and then refrigerate before serving.
