Marg's Butterscotch No Bake Cookies
This quick and simple cookie recipe was given to Elaine years ago by a dear friend of hers who has very sadly since succumbed to cancer.
Elaine brings in her latest batch of homemade goodies to share on a saturday morning (and again during the week if we're lucky..) and these are a definite energy boosting favourite with staff.
1 1/2 cups sugar
1/2 cup margarine
2/3 cup evaporated milk
Combine the above ingredients in a large saucepan, bring to a boil, stirring occasionally, and keep at a full rolling boil for 2 minutes.
Then remove from the heat and stir in:
1 cup butterscotch chipits (or a flavour of your choice)
Stir til smooth. Then add:
3 1/2 cup quick cooking rolled oats
1/2 cup fine unsweetened coconut
Drop by spoonfuls (or whatever size you like) onto wax paper or parchment paper lined cookie sheet.
Refrigerate when cool enough to handle.
