Rhubarb Berry Cake
It's all about the puddings...this is another delicious recipe featuring rhubarb, one of our seasonal favourites at the store. The strawberries add an extra juiciness to the fruit layer, so although you might not be adding your own just yet, they are worth including!
1 pkg Yellow cake mix (2 layer size), divided
2/3 cup packed brown sugar
2 tbsp cold butter or margarine
3/4 cup chopped walnuts
1 cup sour cream
1 1/2 cups finely chopped rhubarb
1 1/2 cups sliced fresh strawberries
In a bowl, combine 2/3 cup cake mix and sugar. Cut in butter until crumbly. Add walnuts. Set aside.
Place remaining cake mix in another bowl. Add eggs and sour cream. Fold in rhubarb and strawberries. Spread in a greased 13" x 9" baking dish.
Sprinkle with reserved crumbs.
Bake at 350F for 40-50 minutes or until toothpick inserted near centre comes out clean. Cool on a wire rack.
Makes 12-15 servings.
