Salsa
The field tomatoes are being harvested in earnest right now, it's a great time for getting together with a group of friends to make salsa. 8 cups tomatoes, squished 1 cup green pepper, diced 1 cup red pepper, diced 2 cans tomato paste (larger size) 1 cup hot peppers, diced-according to your heat preference 2 tbsp. pickling salt 1.5-2 cups vinegar 2 tbsp. sugar 1 tbsp. oregano 1 tbsp. paprika 4 cloves minced garlic 1 stalk celery, diced (optional) Simmer 1.5 hours Bottle and seal in usual manner
