Asparagus Rice Soup
3 cups chopped asparagus 1 clove garlic, chopped 1 small onion, chopped 1/2 cup uncooked rice (not instant) 1 chicken bouillon cube 2 tbsp. olive oil 1.5 tsp. salt 1/8 tsp. pepper 2 tbsp. butter Bring 4.5 cups water to a boil. Add everything but butter. Return to a boil. Reduce heat to low; cover and cook till rice is tender-about 20 minutes. Stir frequently. Add butter and serve. Serves four.
