Strawberry Rhubarb Dessert
Strawberries and rhubarb-how can this miss???? 1 cup chopped fresh or frozen rhubarb 1/4 cup sugar 1 tbsp. water In a small saucepan combine these ingredients. Bring to a boil, stirring frequently. Reduce heat and simmer for about ten minutes. Transfer to a boil and cool to room temperature. Next step: 1 cup sliced fresh strawberries 1 tbsp. sugar 2/3 cup whipping cream, whipped Place strawberries and sugar in a food processor and puree. Stir into rhubarb mixture. Fold in whipped cream. Spoon into four parfait glasses or dessert dishes. Decorate with sliced strawberries if desired.
