Polish Beet Cake

1 1/2 cups sugar

1 can (15 oz.) diced beets, drained and pureed

1 cup veg. oil or 1 cup thick unsweetened applesauce

3 eggs

3 squares unsweetened chocolate, melted and cooled

1 tsp. vanilla

1 3/4 cups flour

1 tsp. baking soda

1/2 tsp. salt

Frosting *or use prepared frosting

1 cup butter

1 cup sugar

3/4 tsp. vanilla

1/2 cup warm milk (110-115 deg. F)

Beat together sugar, beets, oil, eggs chocolate and vanilla till smooth.  Mix dry ingredients and gradually add to sugar mixture.  Pour into greased and floured 10 inch tube pan (or bundt pan).

Bake at 350 deg. F for 45-50 minutes.  Cool for 10 minutes before removing from pan to wire rack to cool completely.

For frosting beat butter and sugar till fluffy.  Add vanilla.  Gradually beat in milk, 1 tbsp. at a time, till smooth.  Frost top and sides of cake.
