Pineapple Upside-Down Cake
Preheat oven to 350 deg. F 2 tbsp. butter or margarine 1/3 cup packed brown sugar 1 tbsp. water -Melt the butter or margarine in a 9 inch round or square pan. -Stir in brown sugar and water. 1-250 gram (8 oz) can pineapple slices, drained and cut in half 6-8 maraschino cherries, halved -Arrange pineapple and cherries in cake pan. Set aside. 1 1/3 cup flour 2/3 cup sugar 2 tsp. baking powder 2/3 cup milk 1/4 cup softened margarine 1 egg 1 tsp vanilla In a medium bowl stir dry ingredients together. Add milk, margarine, egg and vanilla. Beat well. Carefully spoon batter over arranged pineapple. Bake in 350 deg. F oven for 30-35 minutes. Cook on wire rack for 5 minutes. Loosen sides and invert onto a plate.
