Loaded Mashed Potatoes

5 lb. (12 medium) potatoes, cooked and mashed

3/4 cup sour cream

1/2 cup milk

3 tbsp. butter or margarine

3 cups shredded cheddar cheese, divided

1/2 pkg. bacon, cooked and crumbled

3 green onions, chopped

salt and pepper to taste

To potatoes add sour cream, milk, butter, salt and pepper.  Beat on medium speed of electric beater or processor till light and fluffy.  Stir in two cups cheddar, bacon and onions.  Transfer to three quart baking dish.  Top with remaining cheese.  Bake at 350 deg. F (uncovered) for 30 minutes.
