Gluten-Free Broccoli Quiche

A great idea to serve for a family brunch, tastes terrific. Give this recipe a try even if you're not avoiding wheat products. Serves: 6-8 helpings Cook Time: Prep - 20 minutes, Bake - 1 hour Ingredients 3 cups shredded potatoes or shredded hashbrowns 3 tbsp vegetable oil 1 cup shredded broccoli 3/4 cup shredded Swiss cheese 3/4 cup shredded mozzarella cheese 2 tbsp potato flakes, potato flour or cornstarch 3 eggs 1/4 cup milk 2 stalks chopped green onion 2 tbsp chopped regular onion 1/4 tsp salt or to taste 1/8 pepper or to taste 1/4 cup diced red pepper or tomato 4-5 slices cooked bacon or ham, chopped Directions Mix potatoes and vegetable oil well and press into the bottom and sides of a 9 inch pie plate. cover pastry with heavy foil. Bake at 400 F for 12-15 minutes. Cook broccoli in boiling water for 2-3 minutes to soften. Drain. Toss cheeses with the potato flakes or substitute. In a medium bowl, beat eggs. Add milk, onions, seasonings and pepper or tomato if desired. Stir in broccoli, meat and cheese. Pour into prepared crust. Bake at 350 F for 40-45 minutes or until knife inserted at the center of the dish comes out clean. Let it stand for 10 minutes before serving.
