Rhubarb Cake
Bottom- 2 cups flour 1/2 cup butter or margarine 1/4 tsp. salt 1 tsp. baking powder 1 egg, beaten Crumble flour, butter, salt and baking powder. Using fork, mix in egg. Remove 3/4 cup mix and save for topping. Press remaining mix in 9 x 9 pan. Top Part- 4 cups fresh, cubed rhubarb 1 1/2 cups sugar 1/2 cup melted butter 1/2 cup flour 2 eggs, beaten Stir together and spoon over crust. Top with remaining crumb mix. Sprinkle with sugar (2 tbsp.) and cinnamon (1-2 tsp.) Bake in 350 deg. F over for 45-50 minutes.
