Spicy Refrigerator Christmas Cookies
This recipe uses wonderfully festive mulling spices demonstrating that they are good for more than just a Christmas beverage! So why not get in the holiday mood with these fantastic Christmas cookies.. another of Elaine's moreish recipes, tried and tested by family, friends and work colleagues. This recipe will make approx. 7 dozen cookies so you can keep a roll or two in the refrigerator for quick baking if company suddenly shows up! Don't forget that here at Art Knapp's we sell mulling spices too - especially good for hot apple cider (which has been very popular with our customers!) and of course, cookies. Ingredients 1 cup butter 1/2 cup shortening 1 cup packed light brown sugar 1 cup sugar 2 eggs 4 cups all-purpose flour 4 tsp mulling spices 1 tsp baking soda 1 cup finely chopped walnuts or chopped slivered almonds Method Cream butter, shortening and sugars in a large bowl til light and fluffy. Add eggs and beat well. Mix dry ingredients and stir into sugar mixture. Stir in nuts. Shape into three 9" x 2" rolls. Wrap in plastic wrap and refrigerate for 24 hours. Unwrap and slice into 1/4" rounds. Place 2 inches apart on ungreased baking sheers and bake at 350F for 12-14 minutes or until slightly browned. Remove to cooling racks. Enjoy! Note: These cookie 'rolls' will keep in the refrigerator for up to a week and you can also freeze them. Christmas cooking at its most convenient!
